Domaine Pichot is one of Vouvray’s stalwarts, and has been making wine in this part of the Loire Valley since the mid-18th century. This dry white wine, made from chenin blanc, is fresh and lively with pear, honeysuckle and lime on the palate, and has a textured, rich mouthfeel.
The Coteau de la Biche wine comes from a 6-hectare plot of vines, and takes its name from a doe that was once thought to have hidden in the cellars. This vineyard has calcareous clay soils with a touch of flint that have proved well-suited to growing excellent chenin blanc.
While most of the wine is fermented in stainless steel, a small portion is fermented in old oak vats to impart complexity. The Coteau de la Biche is then aged on its lees before bottling.
