Mas la Chevaliere brings Domaine Laroche’s chardonnay expertise to the Languedoc. The Peyroli vineyard is situated on limestone soils at an altitude of 400-500m above sea level, giving a perfectly cool climate for chardonnay production in a land otherwise dominated by syrah and grenache.
After harvest, which takes place much later than in other parts of the Languedoc, the grapes are whole-bunch pressed to retain delicate aromatic characters. The juice is then fermented in mostly stainless steel, with 20% in oak to bring complexity to the wine.
The Vignoble Peyroli is classified under the local IGP designation, to allow the use of irrigation in the vineyard. It is lightly filtered and fined, and displays a fine, balanced acidity with pear, quince and white peach characters.
