A medium white wine from Artisanal wine producer Pheasant’s Tears – the name comes from a Georgian tale in which the hero claims that only a bottle beyond measure could make a pheasant cry tears of joy. Tsolikauri is one of Georgia’s native grape varieties.
Pheasant’s Tears is produced by a collective dedicated to reviving Georgia’s wine industry. Georgia and the Transcaucasus can claim that they were the birthplace of modern wine cultivation, with a history stretching back 8000 years. The Georgian wine industry suffered when Georgia slipped beneath Soviet rule, but now passionate winemakers are putting the country back on the wine map. The Pheasant’s Tears collective use traditional farming methods, and ferment their wine in qvevri, huge terracotta urns buried beneath the ground.
