This small grower operation has been providing grapes from its grand cru vineyards in Ambonnay to the likes of Moet & Chandon and Mumm, but has always made wine for itself as well. The Rosé reserve, which is pinot noir-dominant with just a small percentage of chardonnay, is a rich, creamy wine with characters of cherry, plum, brioche, citrus peel and spice.
Bolliot has 18 plots of vines, all with a southerly exposure, giving the grapes plenty of access to the sun during the growing season. The vineyards are worked by hand, and the winemaking process is very traditional, with fermentation taking place with wild yeasts. The Rose Reserve does not undergo malolactic fermentation, and is not fined or filtered.
