A lively champagne from the pretty village of Polisot, near Troyes in the Champagne-Ardenne region of France. The moreish fizz is made from pinot noir grapes, grown on fifty year-old vines on a family Domaine managed with biodynamic principles. This organic champagne is perfect as an aperitif.
The Domaine Moreau has been in the Moreau family for 100 years. Dominique Moreau, the current owner, remembers her grandmother’s tales of working the vines during the First World War with only her horse for company.
The pinot noir grapes are harvested by hand and left whole for fermentation in enamelled vats with wild yeasts. The champagne rests on racks for three years to generate its bubbles. Resonance is unfiltered, unfined and contain minimal sulphates.
