This light, low-alcohol red is a classic offering from the Jura. The Pignier property has been planted to vine since the middle ages, and came into the hands of the Pignier family during the French Revolution in the late 18th century. Today, a range of classic Jura varieties are planted in the rocky vineyards, including savagnin, chardonnay and poulsard. Pignier switched to biodynamic farming in 2002, and today they are certified by Demeter.
The grapes are grown on calcareous clay soils in a sunny vineyard that is sheltered from the wind. After being picked by hand, the grapes are sorted and left to ferment with indigenous yeasts for two weeks in a mix of stainless steel and old oak. After fermentation, En Chone is left to mature for up to 10 months in neutral oak.
