No pheasants were harmed during the making of this wine from the Kakheti region of Georgia. Created from Shavkapito grapes once fermented to serve to Georgia’s royalty, this is a rich, devilish red, with hints of smoky leather and tobacco. Pheasant’s Tears is best enjoyed by candlelight in front of an open fire.
Pheasant’s tears is produced by a collective who have set themselves the task of reviving Georgia’s wine culture – Georgia and Transcaucasus can claim that they were the birthplace of modern wine cultivation, with a history stretching back 8000 years, however Georgia slipped beneath Soviet rule and the wine industry suffered. The collective is headed by Gela Patalashvili, who is using traditional farming methods, and fermenting his wine in qveri, huge terracotta urns buried beneath the ground.
