This Pecorino is vinificated mainly in steel, with a variable percentage (up to 30%) in wood. Giving the wine more character and gentle woody notes. On the nose, zesty with lemon peel, apple and pear. The Palate is refreshing with nice acidity, well balance from flowery notes and a medium lasting minerality.
It is commonly thought that the pecorino grape takes the name from the Italian cheese pecorino, But surprisingly this is not the case. The grape is actually named pecorino (Italian word for sheep) because shape of the grape resembles a sheep’s head. The Gran Sasso vineyards are found 150mt above sea level with limestone and clay soil. The grapes here benefit from the Adriatic Sea breeze and perfect amount of sun exposure. This results in perfect ripening even during a rainy summer.
