Lo Paire, or “the father” in the local Occitan dialect, is La Croix de Saint-Jean’s flagship wine, made from a blend of syrah with some mourvedre and grenache. It is an elegant red wine, exhibiting aromas of dried herbs, liquorice and blackcurrant, and is full-bodied with a good tannic structure.
The grapes for Lo Paire are grown on limestone-rich slopes ranging in altitude in the northeast of the Minervois appellation. After harvest, the grapes are fermented partially in concrete vats, and partially using the vinification integrale method, which uses rotating oak barrels to allow the winemaker to control tannin extraction. Lo Paire is then aged in barrel for 12 months before bottling.
Lo Paire has been well received by critics – Jancis Robinson gave the wine 16 points, calling it “super charming”.
