This light Roussillon white wine is made from a blend of local and international varieties, dominated by sauvignon blanc and macabeo. It has a fresh, characterful acidity with notes of flint and green apple, and a distinctly floral nose.
Le Soula has around 10 hectares of white grape vines, ranging from macabeo and grenache blanc to the ubiquitous Chardonnay. These are planted at the relatively high altitudes of the Fenouilledes region, where warm days and cool nights help with the development of acidity in the grapes.
After whole-bunch pressing, the grapes are left to ferment at their leisure using wild yeasts. The wine is then aged for around 20 months in large wooden tanks, a small percentage of which are new.
