A medium bodied red made from Cabernet Franc grapes in Catalonia’s Conca de Barbera by Joan Ramon Escoda and Carmen Sanahuja; passionate oenologists (who also grow olive trees, almond vines and manage a small farm). Coll De Sabater is a wine for drinking or ageing.
Years of learning his craft in France steered Joan towards biodynamic farming and away from sulphates – he has even founded an association for natural winemakers which holds an annual natural-wines-only fair. The grapes for this, most definitely sulphate free red are harvested manually and aged for twelve months in French oak casks. Coll De Sabater is unfiltered and unfined.
