An organic white from the high hills of the Mukhrani Valley in Georgia, where it is reckoned that wine has been cultivated longer than anywhere else in the world. No Skin Contact is made on a family farm from the rare chinuri grape, which is harvested by hand, pressed by foot and fermented in traditional terracotta urns.
The Bitatishki estate was given to the Bitatishki family after Georgia’s land reforms in 1992. Iago Bitatishki uses traditional methods to produce his wine: the grapes are harvested by hand and pressed by foot before fermentation in 300 year-old terracotta ‘qvevri’, buried beneath the floor of the farm’s cellar.
Some Georgian wines are fermented with the skin and stalks left intact, which gives the wine an orange hue. This chinuri wine has been fermented with the skin off, giving a clear wine with mineral and citrus notes.
